This dish has been a easy favorite of ours for years. I haven't had one in in ages because I had spent the last 7 months eating minimal amounts of plant meats. I usually make it with 3 pieces tenders, but I had an extra guest so we went with the package serving size of 2.
Serves 2 with leftover tenders
1 package of Gardein Seven Grain Crispy Tenders
1 package of Engine 2 Sprouted Ancient Grains wraps
10 organic cherry tomatoes halved
1/2 organic cucumber cut into thin wedges
1 small head or organic romaine lettuce thinly sliced
1/8 cup dijon mustard
1/8 cup agave or honey
Cook 6 tenders according to the package directions.
Mix the dijon mustard and the agave or honey and set aside. Please note we did not have dijon on hand and I used yellow mustard instead. It was fine in a pinch but it's better dijon. Alternatively you could use hummus instead.
Heat the tortillas over an open flame by turning them with tongs very quickly until they become soft. Make sure not to lay them on over the stove or they may catch fire.
Assemble the wraps by layering the romaine, cucumber and tomatoes on the bottom. Drizzle with honey mustard dressing. Add the tenders on top. I eat mine like a taco. Enjoy!
